This recipe is one my Grandma Mellen’s Christmas traditions! She makes this every year for family and friends. It is one of my favorite holiday treats. The raw peanuts are extra delicious.
(Please note this is HARD caramel popcorn! Toffee like– not for everyone)
CARAMEL CORN

Pre-heat 3 gallons of popped corn in 250 degree oven. (We place our movie theater popped popcorn in a paper bag into the oven to heat)
For the caramel:
3 cups white sugar
2 cups water
2 cups brown sugar
1½ cups white karo syrup
Using candy thermometer cook to 240 degrees – add 2 cups raw peanuts – continue to cook to 290 degrees – then add 2 tsps. salt – cook to 300 deg —Remove from heat and add 1 cube melted butter, 2 tsps. vanilla and 2 tsps. soda.
Pour onto 3 gallons popcorn— stir and stir until all kernals are covered.
Spread on clean/ greased table and mash out to cool.
