For as long as I can remember, my grandma has always made coconut bread for all of her neighbors and friends.
My mother and I started baking it together last year, and this will be our second year passing loafs out to our friends too. This year was extra special because it made me realize how many special little traditions that my grandma has, that I want to keep alive and strong for Remi. I am so lucky she is still around, having a great-grandma was a highlight of my childhood. I hope Remi gets a lot more “GG” time.
I wanted to share this special recipe with you all, because I really haven’t tried a bread quite like this. It is super yummy and moist, and you cannot beat the sugar glaze on top.
So grab your mother, your sister, your daughter or a girlfriend and put on some Christmas music while baking this yummy, unique Christmas treat!
Coconut Bread
One of our favorite holiday traditions ❤
Ingredients
- 4 eggs
- 1 Cup oil we use canola
- 1 Cup buttermilk
- 2 Cups sugar
- 2 tsp. coconut extract
- 1/2 tsp. baking powder
- 3 Cups flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 Cup coconut flakes
Glaze
- 1 Cup sugar
- 1/2 Cup water
- 2 Tbsp. butter
- 1 tsp. coconut extract
Instructions
FOR THE BREAD:
- grease pans, preheat oven to 350
- cream sugar, oil, + extract
- beat eggs- add to sugar mixture
- add dry ingredients, milk, then coconut flakes
- *fill pans just a little over half full
- cook at 350 degrees for 30-40 minutes
Glaze:
- stir to boil: sugar, water, butter.
- boil 5 minutes
- add coconut extract
- pour glaze generously over hot bread.
Notes
This recipe makes 5-6 small loafs or 2-3 large loafs.
