This quick little recipe is savory as hell for how simple it is. It also warms up for some killer left-overs, or delicious meal-prep. Low carb, Keto friendly, and FAST.
This recipe can also be made Whole30 friendly with the right sausage!
Slice your favorite chicken sausage, and chop your choice of veggies! We love the Sabatino’s Gourmet chicken sausage– FOUND AT COSTCO! Both the basil & cracked black pepper, or the mozzarella with artichoke & garlic are divine!! Aidells makes a stellar dinner chicken sausage too, in many delicious combinations.
Our go-to veggies are: mushrooms, bell peppers, onion, and cherry tomatoes.
All which you can also find at Costco as well. We have even used broccoli, asparagus and cauliflower.
Season with olive oil, salt & pepper, and your favorite spice blend.
Try the Umami seasoning from Trader Joe’s, if you haven’t already!
We literally put this savory little mixture on EVERYTHING. It elevates the flavor exquisitely.
Roast in the oven at 425 degrees for about 30-60 minutes, depending on your desired roasted-ness. Stir up every 10-15 minutes.
Take note, this dish shrinks quite a bit while cooking. I always start with two glass 9×13 dishes of raw veggies & meat– and end with one combined full dish of roasted goodness.,
BONUS: low carb // Keto friendly and can easily be made Paleo with the right sausage!
Roasted Veggies & Chicken Sausage
Ingredients
- 6-8 link chicken sausage sliced
- 4 peppers chopped
- 1 package mushrooms chopped
- 1 handful cherry tomatoes
- 1 onion chopped
- 1 tbsp season blend of choice
- 1 clove garlic optional
- 1 tbsp oilve oil
Instructions
- Roast in oven at 425 degrees, until desired roastedness.Stir occasionally.
